I recently got married and discovered how difficult it was to get a caterer for a full vegan menu, cajoled a friend (who runs a bakery nearby) with some of my recipes to sort that side out. But, as for the cake, the nearest bakery for a vegan wedding cake was 100 miles from here. Top that with the wedding being on 28th December and everywhere shut over Christmas, I gave up and made my own!
3 layers in each tier, separated by Amaretto icing, no one knew it was vegan until I told them.
Maybe time for a business diversion!
